Apple m7803 -- the one that came with old CRT G3/G4 iMacs. Solid, inexpensive keyboard. You can probably get one for ~$10 on eBay or something.

If by "sensitivity" you mean adjusting how fast the autorepeat is when you hold down the keys, there is no way to adjust that; you're stuck with the awful settings forced on everyone. If you mean lag or dropped inputs, that is just Flash being awful. Try playing in a lightweight browser like Chrome and closing any programs running in the background.

i would recommend just going to frys if you cant get one online and testing the keyboards there. easier to experience and get one to your personal taste.
